My current mastery of this grammar point:
父 (ちち) is the humble term used to refer to one's own father. お父さん (おとうさん) is the honorific form used to refer to other people's fathers, or to one's own father in informal situations.
お父さん is also used when making direct reference to one's own father, for example when calling out to your own father, as in the English 'Dad'. For example:
