皆 means 'all', 'everyone' etc. When referring to people, it can technically be read as both みな and みんな. However, みな is considered much more polite than みんな, which is a casual contraction. As a result:
  1. It's best not to use kanji when you're using the reading みんな (write it in kana)
  2. The honorific さん cannot be added to みんな - only to みな (in which case, it would be better to write みな in kanji, 皆)
To summarize:
みんなLeast polite; write in kana
みんなさんIncorrect! Do not use.
みな
Medium politeness; write with kanji
みな
さん
Most polite; write in kana
Another key difference is that みんな can be used to refer to things and is synonymous with
ぜんぶ
全部
, but みな(さん) only ever refers to people.
